I think it makes breakfast taste better and feels fancier if I stack it up and call it a parfait! This recipe for my Strawberry Banana Oatmeal Parfait is actually so good you won’t care what it’s called!

What You Need
1 cup oats (regular not instant)
1.5 cups almond milk
3 tablespoons chia seeds
2 tablespoons pure maple syrup
1 teaspoon vanilla extract
6 strawberries, sliced
1 banana, sliced
2 tablespoons almond butter
2 tablespoons raw cacao chips

How to make Strawberry Banana Oatmeal Parfait
In a large bowl, combine the oats, almond milk, chia seeds, vanilla and, syrup.
Mix well until everything is combined. Let it sit overnight (or for at least four hours) in the fridge.
In the morning, chop the berries and bananas.
Portion the oatmeal mixture into bowls/jars.
Mix in the almond butter and top with the berries, banana and, cacao. Serve cold and enjoy!
In a rush? Pre-portion everything the night before. Combine the first five ingredients and mix well. Portion into two mason jars and layer with almond butter, berries, banana, and cacao. Let sit in the fridge overnight and grab on the way out the door!

Fast breakfast doesn’t always need to come in a package. We try to make as many of our foods so that we can grab them on the way out the door because life rarely goes the way we plan it to. This Strawberry Banana Oatmeal Parfait is perfect for that because I make it in a mason jar, screw on the lid, and bring a plastic spoon with me. When I’m done with breakfast, I can just throw away the spoon and put the lid back on the jar. A healthy breakfast done frugally AND quickly! It’s great for kids too!

Strawberry Banana Oatmeal Parfait
