If you have kids like mine you MUST have one that wants a peanut butter and jelly sandwich for EVERY. SINGLE. MEAL. It doesn’t matter what time of day it is, this is what this kid wants. I needed new ways to give my son his PB&J without a direct IV line to the neck type deal. So we created these Peanut Butter and Jelly Snack Bars!
These are a huge hit in my home and I am hoping they will be in yours as well! They are so simple and if you make a double batch you can freeze them for later.
I find that 2-ish bars per little baggie freeze well and you don’t have to thaw more than you need later on.

Peanut Butter & Jelly Snack Bars Recipe

What You Need
1 ¾ cup Flour
¾ cup Brown Sugar
½ tsp. Baking Powder
¾ tsp. Salt
1 tsp. Vanilla
½ cup Butter softened
1 Egg
½ cup Salted Peanuts
1 cup Strawberry Jam
1 cup Crunchy Peanut Butter

How to make Peanut Butter & Jelly Snack Bars
Preheat oven to 350 degrees and line a 7×11 baking dish with parchment paper leaving an overhang on the ends. In a mixing bowl, beat together the butter, peanut butter, and sugar until smooth.
Add in the egg and vanilla and beat until well blended.
Add the flour, baking powder, and salt and stir until blended.
Press ¾ of the batter into the bottom of the pan and spread the jam over it.
Crumble the remaining batter over the jam and sprinkle the peanuts on top.
Bake for about 25-30 minutes or until baked through.
Let the bars cool, then lift them out of the pan by the parchment paper. Cut into squares.
Easy and delicious snack for everyone!
