If you’re like me, you like to grill year round. Weather doesn’t always permit, and for those days you can make these Cast Iron Grilled Chicken Skewers! They are gluten-free and paleo approved tender chicken fillets smothered in a custom marinade, grilled to perfection.

Cast Iron Grilled Chicken Skewers Recipe
What you need
1ยฝ lb. of boneless Chicken Thighs, cut into bite-sized pieces
Bamboo skewersBamboo skewers, soaked for at least an hour in water
Cast Iron Skillet
Marinade
ยฝ cup of Greek Yogurt
6 fat cloves of Garlic
1 teaspoon of Coriander Powder
ยฝ teaspoon of Cumin Powder
1 teaspoon of Smoked Paprika
ยฝ teaspoon of Cayenne Pepper (optional)
ยฝ teaspoon of Nutmeg
Zest and juice of 1 lemon
2 tablespoon of Olive Oil + plus more for grilling
ยฝ teaspoon of Cinnamon
Salt and Pepper to taste

How to makeย Cast Iron Grilled Chicken Skewers Recipe
In a large bowl, combine all the ingredient under โMarinadeโ and give it a good whisk. Taste and add more salt if necessary.
Add the cleaned and cubed chicken thighs and mix well. Make sure every bit of the chicken is well covered with the marinade. This is best done in a resealable bag or Ziploc.

Marinate the chicken from anywhere from ยฝ hour to 4 hours. Also, soak the wooden skewers in cold water.
Thread the chicken pieces onto the wooden skewers.
Heat a cast iron grill pan till it is very very hot. Using a silicone brush, lightly grease the grill pan with oil. Place the prepared skewers in a single layer. Sear for 3 to 4 minutes before turning. Baste the skewers with oil before turning. Sear again for 3 to 4 minutes. Keep basting with oil and rotate the chicken on all sides till opaque and fully cooked

Notes
Chicken thighs work best for this kind of kebabs, as it is more favorable. If using chicken breasts, do not marinade more than 2 hours, as the lemon juice will toughen the meat.
