As a family of 6, we are always thinking of ways to use up Thanksgiving leftovers so we have little waste, meaning less money thrown away as well. We love enchiladas so decided why not toss all our leftovers in a tortilla and make these Leftover Turkey Enchiladas! Thanksgiving Leftover Turkey Enchiladas
What You Need
1 cups shredded cooked turkey meat
3/4 cups prepared stuffing
3/4 cups shredded Colby jack cheese
1 (10 oz.) cans enchilada sauce
4 large flour tortillas

How to make Thanksgiving Leftover Turkey Enchiladas
Preheat oven to 350 degrees F and lightly grease an 8 x 8-inch pan with cooking spray.
Pour 1/3 cup of enchilada sauce in the pan and spread to coat the bottom.
Combine shredded turkey, stuffing, and 1/2 cup cheese in a medium bowl and stir.
Spread a scoop of the filling down the center of each tortilla and roll up.
Place the enchiladas in the pan and cover with enchilada sauce. Sprinkle remaining cheese over the top and bake for 20 minutes.
Note: Can easily be doubled and made in a 13×9-inch baking dish.
