These lucky charm mint chip cookies are a fun and yummy treat to make for St. Patrick’s Day.
So easy to bake and festive too these make a delicious cookie with all the flavors. If you love these St. Patrick’s Day treats, these shamrock pretzels are another easy dessert idea.

Lucky Charm Cookies

This cookie recipe has Lucky Charms baked inside the cookies. Plus the added flavors of mint and chocolate make these cookies rich and divine! I mean who wouldn’t love marshmallows, mint, and chocolate in every bite.

What are Lucky Charms?

Okay, I am going to pretend this is a sugar loaded question (a little humor there). Lucky Charms are a cereal with colorful marshmallows. It is an extremely popular cereal with kids, it is full of sugar so maybe not the healthiest option. Most kids love the marshmallows in the cereal and are known to pick out the marshmallows from the cereal. I wish they sold Lucky Charm in the same mini marshmallows that are in the cereal. (They do sell the marshmallows, but they are a larger version and won’t work for these cookies.)

Where to buy Lucky Charm cookie dough?

In 2019 I spotted Pillsbury Lucky Charm sugar cookie dough at Walmart and a few local grocery stores. It was quite magical, these homemade cookies are a fun homemade twist on the “unicorn” cookie dough that was in stores for a limited amount of time.

Should I use gel or liquid food coloring?

You can use either gel or liquid food coloring. Liquid food coloring is less concentrated then gel so it requires a few more drops. You can also completely omit food coloring from the recipe, it’s not necessary but it does make the cookies green and festive.

Pro Tips for Making Mint Chocolate Chip Lucky Charm Cookies

  • Use softened butter.
  • Do not over bake these cookies.
  • Allow two minutes of cooling time on the sheet pan before transferring.

Ingredients for these St. Patrick’s Day Cookies

  • butter
  • sugar
  • egg
  • peppermint extract
  • green food coloring
  • flour
  • baking soda
  • baking powder
  • cream of tartar
  • salt
  • chocolate chips
  • Lucky Charms cereal (marshmallows only)

How to make mint chocolate chip lucky charm cookies

First you will want to preheat your oven to 350 degrees Fahrenheit.

Next in a large mixing bowl cream the butter and sugar together.

Then add in the egg, peppermint extract, and food coloring. Continue to mix the dough until it’s fully combined and the perfect shade of green (adjust the food coloring as necessary or don’t use food coloring if you prefer).

After that add the flour, baking soda, baking powder, cream of tartar and salt to the mixing bowl and continue to mix.

Once the cookie dough is formed, you will fold in the chocolate chips and lucky charms marshmallows.

Roll the cookie dough into small balls and place on a greased cookie sheet.

Bake the cookies for 10 minutes at 350 degree Fahrenheit.

Finally let the cookies cool for 2 minutes before transferring to a cooling rack.

What You Need

  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 1 egg
  • 3/4 tsp peppermint extract
  • 3-4 drops green food coloring
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cream of tartar
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 1 1/2 cup Lucky Charms Cereal marshmallows only

    In your picture above (butter, sugars) the mixing bowl contains butter, granulated sugar and brown sugar, however, your recipe does not have brown sugar. What is the measurement for the brown sugar please. Thank you
