I am a lover of cookies.  Strawberry Crinkle Cookies are so versatile for the seasons and everyone loves them! We also love easy chocolate cookies but we have a unique take on those. See what I mean with my Chocolate Cookie Roll-ups.

Strawberry Crinkle Cookies are amazingly easy to whip up and are the best right out of the oven. I always snag one off the sheet pans since once my kids notice I made cookies, that will be the only one I end up getting.

Strawberry Crinkle Cookies

What you need

Strawberry Crinkle Cookies (1)
1 box of Strawberry Cake Mix
2 Eggs
1/3 cup of Canola or Vegetable Oil
½ cup of Confectioners Sugar (powdered sugar)

Makes 20 to 22 cookies

How to make Strawberry Crinkle Cookies

Preheat oven 350 degrees and line a cookie sheet with parchment paper or use a silicone liner. In a large mixing bowl add the cake mix, oil and eggs and mix it well until a sticky dough is formed. Let it refrigerate for about 30 minutes.

Add the powdered sugar to a bowl or plate. Using a small cookie scoop, scoop out about 2 tablespoons of the dough and roll it between your palms to form a smooth round ball.

Roll it completely in the powdered sugar and place it on the prepared cookie sheet. Repeat with the rest of the dough. Bake for 10 to 12 minutes.

Gently transfer to the cooling rack to cool completely. Store the leftovers in an airtight container in the refrigerator.
