2 cups shredded carrots
1/2 cup raisins
1 large apple (I used a Fuji apple)
1/2 cup fresh pineapple, diced
1/3 cup purple seedless grapes, halved
3/4 cup mayonnaise
1/4 cup plain Greek yogurt
1 Tablespoon brown sugar
1/4 teaspoon salt
1 Tablespoon lemon juice
How To Makeย Carrot Raisin Salad
Core, peel and dice the apple. Add the apple to a small mixing bowl and toss with lemon juice (this will keep the apple from browning).
In a large mixing bowl, add all of the ingredients and gently toss to coat.
Cover and chill for at least 2 hours before serving.
Keep yourย Carrot Raisin Salad refrigerated and covered in an airtight container for up to 2-3 days. This is a great recipe to make ahead for family gatherings at your house, or even at a different location. This dish travels well and will stay cool in a cooler for even a few hours in the car.

I am totally not a fan of carrot salad – or at least have not been in the past but the inclusion of yogurt puts a different spin on it and I may have to try it. It is definitely colorful and inviting.
