What You Need

  • 4 Chicken Breasts boneless, skinless
  • Salt to taste
  • Pepper to taste
  • 2 Eggs large
  • 1/4 cup Whole Milk
  • 2 cups Panko or Breadcrumbs
  • 2 cups Parmesan Cheese shredded
  • 1 tbsp. Italian Seasoning
  • 1 1/2 tsp. Garlic Powder
  • 1 lb. Golden Potatoes small, rinsed and dried
  • 1 bunch Asparagus
  • 2 tbsp. Olive Oil extra virgin

Directions

  1. Preheat oven to 425 degrees.
  2. Grease a large baking sheet or line with parchment paper and set aside.
  3. In a medium bowl, combine eggs and milk and whisk until smooth.
  4. In another medium bowl, combine panko, shredded parmesan cheese, Italian seasoning, and garlic powder.
  5. Season the chicken breasts with salt and pepper. Dunk each breast into the egg mixture, then coat it with the panko mixture and place onto the sheet pan.
  6. Cut the small golden potatoes into quarters and toss with extra-virgin olive oil, salt, and pepper and add to the sheet pan.
  7. Cut the asparagus into thirds horizontally, toss with extra-virgin olive oil, salt, and pepper and set aside.
  8. Place the sheet pan in the oven and bake for 15 minutes, flip each breast over and add the asparagus to the pan, and bake for an additional 15 minutes.
  9. The chicken should be cooked thoroughly and the potatoes should be soft enough to pierce with a fork.
