A light fruit salad tossed with carrot shreds.


What You Need

  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 1 large apple I used a Fuji apple
  • 1/2 cup fresh pineapple diced
  • 1/3 cup purple seedless grapes halved
  • 3/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1 Tablespoon lemon juice


  1. Core, peel and dice the apple. Add the apple to a small mixing bowl and toss with lemon juice (this will keep the apple from browning).
  2. In a large mixing bowl, add all of the ingredients and gently toss to coat.
  3. Cover and chill for at least 2 hours before serving.
